genitive instead of accusative

Why do we use this case here? And this verb? What rule should I use here?

Hi everyone!

I have a question regarding the usage of genitive in phrases like:
Я не хочу персиков - I don't want peaches.

Why should we use genitive here? Can't I just say "Я не хочу персики"? There are many situations like that, with genitive instead of accusative: я хочу воды, купи яблок etc.

You can say (Я не хочу персики)but not quite right (Я не хочу персиков) . Can say (нету персиков ) , not right (нету персики).
