Dialogue 1. Ending for "water" changes from "a" to "y". Why is this? Water is inanimate and therefore the ending should stay the same.

It is russian. We don't care if the object is animate or not. And to "water" we refer as "she" therefore comes вода, воды, воде, воду, водой, о воде

Вода is unanimated, but it is femenin. So, you must it declinate.
