These two phrases have the same meanings - "I have". The difference is that we rarely use the phrase "Я имею", almost never. Besides, this phrase can have obscene value, but it depends on context. The phrase "У меня есть" is more common, so use it.

I don't think you did something wrong. You used a basic recipe, try to add to kasha some fruits or nuts or chocolate or all together.

I'm russian and I can assure you that there is no differences in pronunciation. As long as I live, I haven't met anyone, who would say "eto" instead of "eta". Besides foreigners, of course)
